Now that spring is here and picnic’s are back, we asked Australian food icon and Founder of the Stephanie Alexander Kitchen Garden Foundation, Stephanie Alexander AO what’s in her picnic basket this spring.
“Frittatas, tarts, veggie tortes and other savoury pastries all make great picnic food. Make your own olive oil pastry, and combine free-range eggs, reduced-fat cream and ricotta, feta or goat’s cheese with spring vegetables, like leeks, broccoli, asparagus, peas and broad beans, for simple but delicious fillings. These picnic goodies can be cooked in individual portions or made in one large dish for sharing. Then simply pack into a picnic hamper.” – Stephanie Alexander
